Description

The Carajillo is a prime example of brilliant simplicity. With just two ingredients – a sweet liqueur (traditionally Licor 43 in Mexico or brandy in Spain) and hot espresso – it creates an intense and delicious flavor experience. The drink is particularly popular in Spain and Latin America as a digestif or an invigorating afternoon drink. The appeal lies in the contrast between the sweetness of the liqueur and the bitterness of the coffee. When served on ice and shaken, it develops a wonderful foam head, similar to an Espresso Martini.

Preparation

  1. Fill a tumbler glass with ice cubes.
  2. Pour the Licor 43 over the ice.
  3. Brew a fresh, hot espresso directly onto the liqueur and ice.
  4. Stir briefly to mix and chill the ingredients.
  5. For a version with a foam head: add all ingredients to a shaker filled with ice, shake vigorously, and strain into a glass with fresh ice.
